I think this is something that depends a lot on the situation. I’ve had moments where I stayed hard and kept going, but other times, I was completely done after finishing. For me, it’s all about arousal and how much I’ve been teasing myself before I actually cum.

One thing that’s worked for me is edging. If I hold back and stay right on the edge for a while before finishing, I sometimes find that I can stay hard longer. It’s like my body doesn’t immediately shut down because I’ve been in that high-arousal state for a long time. But if I go full release with no control, there’s no way I can keep going immediately.
