The problem is international. It happened to me over 20 years ago in my own bar: we did a detailed inventory every day after work, and every bottle of opened spirits was weighed and recorded to the nearest 5 grams. The morning shift also had to do the same inventory to check before work began, as the cleaning staff were in the shop at night.
